Ingredients

  • 4 lbs russet potatoes
  • 2 Quarts of water
  • Salt
  • 1/2 tsp baking soda

Basic Steps

  • Skin potatoes and cut into 2-3 inch cubes
    • Leave cut potatoes in water to avoid them turning brown
  • Boil 2 quarts water with 2 Tbsp salt and half tsp baking soda
  • Add potatoes for 10 minutes or until fork pierces them but still with a little resistence
  • Strain and leave potatoes to dry for a few minutes
  • Season and mix potatoes (agitate them to allow a slurry that becomes a nice crust).
  • Put the potatoes on a oven dish and cook in oven at 450 degrees F for 20 minutes. Flip and repeat until done (At least 45 minutes).
